Keto Rotisserie Chicken

Preparation Time: 5 minutes

Cook Time: 40 minutes

Serves: 4-6 servings

Ingredients

4.3 lbs or 1 whole chicken (cavity removed, rinsed and pat dried)

1/2 tsp pepper

1 1/2 tsps salt

1 tsp paprika

1 tsp granulated garlic

1 (quartered) yellow onion (if desired)

1 3/4 tbsps canola/coconut/avocado oil

1 cup chicken broth or stock

1 (halved) lemon (if desired)

Instructions

1. Place the lemon and onions in the chicken cavity.

2. Add all spices, pepper and salt into a small ramekin dish.

3. Stir well until combined.

4. Select the "saute" setting on an electric pressure cooker and add half of the oil.

5. Add the chicken into the hot oil in the insert of the electric pressure cooker with the breast side down.

6. Rub the other chicken side with the remaining oil and the spices mixture.

7. Crisp chicken breast side for 3-4 minutes before flipping the chicken over.

8. Crisp the other chicken breast side for 1 minute.

9. Place a trivet into the electric pressure cooker insert and add the brown chicken on the trivet with the breast side up.

10. Pour in the chicken stock into the electric pressure cooker.

11. Close the lid of the electric pressure cooker, and set vent to "sealed".

12. Select "manual" setting on the electric pressure cooker, select a 25 minute cook time and cook on high.

13. Once the cook time has been reached, select the "cancel" setting and allow pressure be released naturally for 15 minutes thereabout, until the float valve drops down.

14. Open the electric pressure cooker lid.

NOTE: Make sure pressure has been released before opening the lid of the electric pressure cooker.

15. Move cooked chicken to a platter and set aside for 5 minutes to cool.

16. Scoop cooking juices over the top of the chicken, serve and enjoy.
